Red Bell Peppers - Stuffed

Good Morning All, Red Bell Peppers are in season and they are most delicious stuffed. They're sort of like CousCous and Barley in that they're just a great vessel for whatever you might like to use as a stuffing. Recently I tried two options....one was with Ground Turkey, Black Beans, Sauteed onion, seeded Roma tomatoes, Chipotle Panko Bread Crumbs and Shredded Mozz Cheese. Just brown and saute the turkey and onions, add in the other ingredients, cut the top from the Pepper, remove seeds and pith. I bake on 350 around 20 min. I've also used Diced Canadian Bacon, seeded Romas, Cannellini Beans and Italian Breadcrumbs with Parmesan. Both are very tasty and summery - give it a try! Bon Appetit
